The Percolator Brewing Process.
The percolator rests atop the stove, its lower chamber gradually heating until the water at the bottom begins to boil. As bubbles of steam form, they surge up the central tube, carrying hot water along in a motion reminiscent of a gas lift pump. The rising water bursts through the top of the tube, splashing against the underside of the lid before cascading through the perforated inner cover of the coffee basket. Evenly dispersed, the hot water soaks the coffee grounds, then drips back down as freshly brewed coffee into the ever-warming reservoir below.
